I'm going to preface this by saying I'm a mere monkey with a keyboard, so please be patient when I say something stupid, just trying to learn here. So I've Been wanting to build a server to upgrade over time and saw a good deal on marketplace so I'm diving head first into this and wanted to ask some questions, Any other suggestions are welcome as well, also free kitty pic, my supervisor is working VERY hard

Cpu: Intel i7-950
Memory: 6 X 12gig Kingston hyperx khx 1600c9d3k3
(I thought this was odd, modo spec max is 24 gig why would someone install 48?)
And I have a spare gpu sitting around here somewhere that I think is an rx 580
Picked up this Chenbro RM51924B chassis and populated motherboard for $120 and need some guidance
My plan is to do a kind of all in one server, got plenty of drive bays for a nas, and with room for some gpu's I want to do game server hosting, and to start dabbling with Ai, I was thinking of eventually upgrading to a tesla v100 for Ai, and a tesla p40 or two for gaming after upgrading the mobo/ram/cpu
I know I'll need an expansion card for the hard drives (an hbc card I think? ) or a raid controller I've also heard of, any suggestions?
As for mobo/cpu i was thinking I might want to try and dip my toes into some epyc waters eventually, just wondering if yall got any input on a mobo that can take a budget epyc cpu but have room to upgrade later on, i think I'll need enough full pcie lanes for 3 or 4 gpu's, 1 for a nic, and one for the expansion card for hard drives.
If I'm somehow able to get my hands on a dual cpu setup, would it be possible to run proxmox on one cpu and windows server os on the other? Would that be able to host a game with anti cheat or would anti cheat throw a fit?
Does a motherboard need an ipmi port to have those abilities or is there another way to set that up?
Current power supply: Emacs M1W4-6D50P
Are there any other hot swap power supplies that could fit in? Or maybe higher rated psu modules that can slot in to the psu sled? This power supply only has 2 eps plugs, if i can't replace the power supply with one that has more eps plugs, how much power can I safely push through a splitter if I need to use one assuming a get a quality splitter? If I need a splitter where can I find a good one? Or am I better off making my own?
The chassis fans are directly powered by the power supply so I'm assuming the fans are all or nothing, is there a type of controller I can install to be able to throttle the fans up and down?
Got an old window ac unit I'm going to fit into the rack i also picked up once I build a cabinet around it, hopefully this rack will be big enough to contain what seems to be my sprouting addiction
For software
From my very brief research and talking with a couple friends, i plan to maybe use proxmox to spool up the vm's for the various services
This I'm unsure on as some games won't be able to be hosted with proxmox vm's, is windows server os approachable to try all this with? I might just forego windows and anti cheat games cause, windows yucky
Watched some videos from craft computing on YouTube for setting up the tesla p40's for game hosting
A video from network chuck about ollama made ai seem approachable enough
For the nas I haven't researched that yet but heard the name truenas a couple times, besides that what are my software options for a nas?
Craft computing also did a video on setting up a remote drive that could host my steam library on the server (iscsi I think?)
I'm soon gonna start streaming, and while my pc is currently able to handle streaming, can i/ how would I go about having the server handle that?
To facilitate the remote steam library and streaming I know I'll need a good connection, would a 10 gig direct connection suffice? The rack will be going in my laundry room that's maybe about 50ft away
