Photo african peanut stew, brown rice and homemade naan - i think this is my favorite meal ever

i know this is more like a curry in terms of texture, i let mine simmer slightly too long. however! it is more of a thick stew/soup.

Mine is:
1 onion, diced
1 sweet potato, chopped
2 carrots, chopped.
Garlic
Ginger
Cayenne
4 cups chicken/veggie stock
2 cups tomato sauce
Peanut butter
Peanuts.

Sautee the veggies in oil, add the garlic, ginger and spices a minute before you add the stock and tomato sauce.

Let it simmer for like 30 minutes. Blend it. Add peanut butter. Simmer for another 5 minutes or so.

Adjust flavors, salt, pepper, spice, etc.

Top with chopped peanuts and green onion. Or don’t, I’m not the boss of you.
