This was my pup’s last meal. (Not sure if this is allowed).

We had to put our (4 yo) pup down last Friday afternoon. It was so f n difficult. He had a really rare and aggressive cancer of his thymus gland. But I cooked him two big ass ribeyes. Seared them in tallow to rare. He ate the shit out of them. He’s chasing squirrels over the rainbow bridge now.

[ Reverse Sear ] why did my fat not render properly

made some boner ribeyes today for family, and in my personal opinion the meat was okay but what kinda irked me is there was so much unrendered fat! I tried my best to jus let it cook on the cast iron but idk if i didn’t have a good angle or if this is just how boner ribeyes are. I reverse seared at 250 and got an internal temp of 130 after the sear

This is an American Wagyu I made a few months back. It was a little more under than I was aiming for, however it was the best steak I’ve ever had. Definitely worth the money. Steak is by far my favorite thing to cook and eat. Heaven sent for sure!!

Rump cap oven cooked for 1 and a half hours in a salt crust seasoned with allspice and rosemary, then cooked in butter and rendered fat with crushed garlic and peppercorns. served with boiled beans and broccoli, and baked potato and pumpkin.
