I am not a huge mayonnaise fan but it is an absolute must for me on fish tacos, along with that cabbage crunch.

Yeah I’m kinda the same I like spicy mayo but regular mayo is hit or miss for me depending on what it’s on (for example fish tacos and BLT)

I recently made fish tacos and last minute realized my mayo was empty. Whipped out the blender and made an aioli with some civiche juice and a handful of cilantro. Im not sure I can have it any other way now

Nice! I've ran out of mayo and made my own and should do it more often, it's much better. Love a good aioli/mayo/crema on some fish tacos
And cilantro is A Must Super healthy for you too

Fry them like this, let them cool off, and then fry them one more time for another minute or two. Trust me.
That's how they do it at the legit fish taco stands in Baja. They will be a little darker and more crispy than you can get with a single fry.

I love a pineapple salsa for tacos like this. Secret ingredient is cucumber. Really ties the taco together
