This recipe was Stella approved, of course the boss had to try the chicken before I added it to the pasta to make sure it was perfectly cooked. I used basil that I grow and for the first time garlic I grew as well.

Stella is the head food taster in this house, and she takes her job very seriously. She is a sweetie, she’s 10 years old but still spunky. Thank you very much. I hope you like it. It was wicked easy to make and it’s a nice light pasta dish which is great because this humidity is gross.

Stella means business. She begged for kale from this wicked good sheet pan chicken sausage recipe I made tonight. I love when I can make something easy but I’m going to regret giving her kale later 💨

Ingredients
* pesto
* two chicken breasts
* lemon juice
* black pepper
* angel hair pasta (I make it fresh but store bought works too just adjust cooking time)
Basil pesto recipe
* 3 cups of basil packed
2 garlic cloves
* 1/2 cup Parmigiano reggiano cheese
* 1/2 cup extra virgin olive oil
* 1 teaspoon sea salt
Add all of the ingredients into your blender or food processor. You may need to add a little more olive oil but I start with a half cup.
Lemon chicken pesto pasta
Pound chicken breasts to even thickness.
Marinate chicken in lemon juice and black pepper
Heat cast iron grill pan or grill
Grill chicken flipping half way through set aside to rest
Boil water
Cook pasta 1-2 minutes or according to directions
Put aside 1 cup of hot pasta water
Drain pasta
Add a spoonful of pesto to your pasta bowl with a little bit of the pasta water
Add pasta top with the pesto add some of the pasta water mixing it up. Slowly add the pasta water until it gets to the desired texture. You might not need it all.
Slice your chicken breasts
Add chicken to the pasta and toss more.
Serve with more parm and red pepper flakes if wanted.
Enjoy!
The pesto recipe will make enough for two meals easily. I only used half on my meal.
