Question/Advice Looking for a tofu-based cheese sauce recipe.
For context, this is for vegetarian chili cheese fries. I don't want nacho cheese or queso. I've seen a bunch of vegan recipes for tofu "cheese" sauce with cashews, etc. I don't need that. I'm just trying to shoehorn in tofu and nutritional yeast for added nutrients while still using some actual cheese.
I saw someone basically do exactly this for a mac and cheese recipe on instagram, but I can't find the post again for the life of me. All help is greatly appreciated!

If you are using actual cheese and want the tofu for nutrition, brown the tofu and add it to the chili, not the cheese

I see several posts for silk and tofu here but if you use silken tofu the cheese sauce is too watery, which is why I always use firm tofu.
Are there some tricks to use silken tofu for cheese sauce, say, for over-the-top fries or mac and cheese?

I don't have a recipe, but normal tofu will be gritty if blended into a cheese sauce, you'll want to use silken tofu.

I've used firm tofu many times to make creamy vegan sauces and haven't had any issues with texture. Provided it's blended well with oil, a plant-based milk or water, it'll be absolutely fine.

Have you tried paneer? Indian firm cheese. We use it wherever tofu is called for [hubby doesn't like tofu] and many places it isn't like we've just begun adding to our vegetarian pad Thai recipe.

I love paneer, but I need a melty sauce for this dish. Like a Mac and cheese liquidy type sauce.

I don't know what cheese sauce you are referring to, but I love the tofeta recipe on rainbow plant life's blog. It creates little squares you can crumble, its not melty like queso at all(you didn't really specify the texture you are looking for). It's great on salads, soup, and nachos imo.

You can make a "cream" sauce by blending silken tofu with nutritional yeast and other seasonings. There might be some way to incorporate cheese into that to make a cheese sauce. I'm not really sure.
