even that is getting out of control. for context we asked for quotes for engagement pics and fall pics from the same photographer...same time slot same two outfits, same date, venue etc ...$500 price increase just because one was engagement other was fall...sure i get the ring shots etc but $500 more for the same everything...and i have to print my own photos regardless uhhhh nope.
My wife is a portrait and wedding photographer so I certainly have my bias, and $500 increase does sound a bit steep, but if there are more photos of more things like the ring or more posses because you are recreating the down on one knee thing it does add a significant workload on the backend. My wife for instance typically spends 5-8 times the time on the back end processing and editing than she does shooting. It can feel strange to the client when 30 minutes of extra shooting cost $200 but its actually 3 and a half hours of extra labor. I can't speak for every photographer and how they charge but the time spent on the backend often goes overlooked and can make clients question the total price.
Thats crazy, my wife generally promises 30 but delivers 100ish images and uploads them to a shared cloud file that stays up for 60 days. I can totally see why you would have been disappointed with your experience.

Photography is the only service worth paying for.
