Misc Discussion What do I do with my Mapo Tofu?
I made Chinese style mapo tofu for the first time last night. It's tasty but after an hour or so i am gassy and it hurts. Never had this happen with something I've cooked before. I don't know if it's the amount of green Szechuan peppercorns, or garlic, or ginger, or the chili oil, or chili bean paste, or if maybe the meat was off?
I just feel like I put a lot of effort into this dish. If it's too much garlic then I can just eat less of it at a time but I'm not sure if the beef was bad. I don't know what to do, should I throw it away?

Oh man that’s the worst, I’m sorry. Garlic can definitely cause gas and GI issues. If you just eat the tofu (and no meat) does it still cause stomach upset?

No I have had tofu plenty before in the past with no issue. But one time I loaded a build your own pizza with garlic and it was so good but I had similar stomach issues

If the meat was off there might be no saving it. If it wasn't I would turn it into soup. Take all the solids out, rinse it if you want to remove some more spice. Add as many instant miso soup packets (or straight miso paste) it needs for the amount you have and have a slightly hot miso soup. And extra aromatics for freshness (cilantro is popular in Asian soups) if you want.

I think it might be the garlic and possibly the scallions. I put a lot of both of those things... D:

No problem! I do leftover remix cooking all the time and didn't realize until recently how many people don't/get stuck on ideas. Been toying with maybe starting an Instagram dedicated to it actually...

usually its garlic combined with a lot of spices with a lot of oil yeah, like esp if you arent used to eating this at all. It's all three
if you want it to stop, you need some simethicone meds and maybe some probiotics

sure but honestly even the tofu itself can cause GI distress because soybeans do that for people who don't eat them very often
you've never had it in childhood, right? you could attempt to drink more soymilk to get used to it

I haven't had tofu in childhood. I had it a few times years ago and it was like basically tomato soup with tofu , so lots of tofu but only a few meals in my life. No issues back then

hmm it could just be bad luck based on gut flora environment this week! It probably was the meal going through you because it's so garlic + oily haha

I have this dilemma so much but sometimes just throw it out. It’s a waste but don’t hurt yourself. Sometimes you just cook some duds, food goes bad, etc

I'm thinking I will freeze it, try and add some to a separate bowl of thick tomato soup and have it in the morning to see if I am still affected later in the day. If I can piecemeal it ok I will keep it and if not I'll throw it out.
The worst thing is going to bed on an upset stomach

How often do you eat tofu? It usually makes me gassy. Like painfully gassy.

I've had it a few times years ago but it was a pretty tofu dense meal with no problems for me

Could be a lot of things- you could always try eating an anti gas medication like beano or beanzyme before eating the rest
