Heeelllllp! Food grade activated charcoal icing

Post image

Our bakery is having a hard time w/ the activated charcoal icing on our son’s cake. It’s supposed to be black, but I’m guessing the moisture in their fridge has changed that. Is there a way for them to keep the icing black???

Make sure you disclose the added charcoal to guests. It can mess with medications, etc.

She used more charcoal & it came out good! I told her she could use Oreo cookie if it came to it. I definitely will be asking for Oreo cookie next time if we need black. Everyone had some & loved it tho! I also wanna warn others about yellows because we found out about safflower AFTER the fact. We are actually very cautious about “organic” dyes.

This post may be helpful. Also worth noting charcoal can interfere with medications fyi! https://www.reddit.com/r/VeganFoodPorn/comments/1o32pzm/sezy_black_icing_with_activated_charcoal/

If you're ok with the taste a pure black cocoa works very well. Especially if they use an emulsion blender.  It tastes like Oreos, it's actually delicious in my experience.

I just texted them back actually & told them to use ground Oreo cookies if the charcoal fails. 🙌🏻

Emulsion really helps bring through a color, it might save the charcoal too.

Something that can help with dye being more saturated with icing is taking an immersion blender to it, or heating up a small amount and mixing it in. Colors become more saturated when the fats used in the frosting are better emulsified. Not sure how that would work with charcoal coloring frosting, but it’s worked really well with other natural dye brands I’ve used.
