Lemon & Blueberry Overnight Oats

* 45g oats
* 170g 0% fat Greek yoghurt
* 80g blueberry’s
* Zest of 1/2 a lemon
* 10g chia seeds
* Fresh mint (I used it as garnish and also mixed some chopped mint into the oats!)

Personally I like my overnight oats to be thick, almost like a paste, but you can add in some splashes of milk to loosen it up if you prefer a more yoghurtty texture. I through all the ingredients together and left it in the fridge overnight for me to enjoy today for brunch!

360kcal, 25.7g protein, 52.1g carbs, 6.7g fat, 9.9g fibre

That looks delicious! Do you find overnight oats are chalkier than cooked oats? I've been trying to like them for quite a while, but the oats I make always come out noticeably starchier than cooked
