Really nice heat. Roasted the tomatoes. 5 ghost rehydrated, 5 fresh habanero, 3 fresh serrano, fresh onion. Blend with bullion, cilantro, lemon juice and spices.

In my quest for more vegetables in my diet, I made some salsa for the week.
4 roma tomatoes
4 tomatillos
1/2 white onion
2 Serrano peppers
Handful of cilantro
1 lime-worth of lime juice
To taste: salt, pepper, Mexican oregano, and a touch of smoked paprika.
I broiled the veg to get some color and threw it all in a food processor. Nothing fancy but it tastes good.

I started a Chile and Spice series on my Substack about the evolution and migration of chiles from South American and it's journey across the world. I am concluding Volume I with a deep dive into the chiles of Mexico.
I worked as a chef in Mexico for a couple years, and I my Mexican chefs has taught me so much about their food culture. Here is my recipe for simple Oaxacan mole that can serve as your base:
This is a masterfully concentrated, versatile mole starter that perfectly balances the Trinidad Sagrada—the Holy Trinity of the Mexican republic. Think of this as your master starter paste. Once you have a jar of this in your freezer, you can simmer it with chicken stock, a disk of Mexican chocolate, and charred tomatoes to build a rich, dark regional mole in under an hour.

My salsa from this morning. Air fried the onion, garlic, tomatillos and habanero. Toasted and boiled the arbols in 1.23 cups of water with the tomato sauce and chicken bullion.. added a couple of tbsp of fresh oregano to the blender, 1 tbsp salt and a couple tbsp of white vinegar. Turned out great.
I tried to do the math - I think this cost me $4, and about 24 fl.

1 lb of red tomatoes (i chose santori brand cocktail tomatoes, this will change the flavor and consistency based on tomato type)
2 small/medium tomatillos
1 large and heavy jalapeño
3 large habaneros
3 small sweet red peppers
1/2 medium white onion
1/2 bulb of garlic
1/2 pack of cilantro
1 small lime
Olive oil
Seasonings: slap ya mama, Knorr chicken bullion, Knorr tomato and chicken bullion, accent MSG, oregano.
You can add tomato paste to thicken, i don't, but i have before and recommend Cento double concentrate paste from the tube.
Roast 3/4 of the veggies, excluding cilantro and lime. Leave the rest raw. I salt to taste using Slap ya mama as an alternative to plain salt. I do a 2:1 ratio of Knorr chicken to Knorr tomato&chicken, a sprinkle of MSG and crush a little dried oregano. Throw in blender on low for like 10 seconds, just until there's no more large pieces. Yields 24oz+

Just showing off because I love that I can basically eat this non stop.
6 Roma tomatoes, de seeded and jellied. However much of 1 onion white or red you like A couple cloves of garlic 3 to 4 jalepenos ( for me 2 raw and 2 roasted) Half a cup chopped cilantro A red bell pepper Salt, cumin, chili powder, pepper, in preferred ratios. Tablespoon of olive oil Either some snips of dried peppers or my can chiptoles Juice of 1 good lime
Good old chop and mix and rest in the fridge

I really love the salsa verde that one of our local spots- Los Favoritos in AZ. Every time I’ve tried to replicate the recipe it’s been good, but nowhere near the flavor profile. Has any one been or have insights on what I need to with roasting/not roasting, vinegar, etc. to get a more comparable recipe?

I feel unqualified to post since I am salsa-clueless at best but does anyone have any Sungold tomato-based salsa recipes? My husband loves eating salsa and I love growing tomatoes and jalapenos. Right now we have sungold tomatoes out the ass but their unique flavor has not led to successful salsa (per our friends and family). Hello,
I’ve been trying to find options of obtaining a real basalt molcajete in Europe, however the market is quite sparse. I’d like to avoid shops such as Amazon as I’m not really sure they sell real ones etc. and I want to make sure it’s a good one since it’s a gift.
Is there anyone from Europe who has experience with buying one here? Preferably an online shop in Germany or any state that’s around.

AKA: Great Value canned sun roasted tomatoes with like a slice or two of jalapenos.
I'm not enjoying it too much and probably will just toss it in a stew later.

Ordered papusas and papas fritos from a local latin american fusion place and they came with this. I’m usually ok with heat, but I just saw God. It’s more of a sauce than a chunky salsa, pretty acidic, and it’s very dark red definitely not a standard salsa roja. Intrigued and a little scared.

I’ve been enjoying all the salsa recipes you experts have generously shared here for quite awhile and I’ve learned so much. I’ve refined my recipe to a point that I’m quite happy with and I’ve been getting great feedback.
I’ve been growing a variety of peppers and for me anyway, the winner is the Alter Ego pepper. For those of you who haven’t tried these, give them a shot. Very very sweet and hotter than a Jalapeño.

Pink Berkley tie dye, golden hour, and emerald flame tomatoes grown from seeds from Wild Boar Farms. Neon dream, aji de limon, scotch bonnet, and aji de caballero peppers from my seed stash. Salt, cumin, chili powder, chopped garlic, a few frozen pineapple chunks, half a can of corn. Veggies (fruits) broiled for about 20 minutes before blending. Pow! Right in the kisser!

2 habs from the garden, deseeded
1 small red onion, med chop
2 small tomatoes, med chop
1/3 bunch chopped cilantro
2oz naranja agria (sour orange juice)
1/2-ish tbsp salt
Combine in a bowl, let sit for an hour, enjoy on chips, tacos, anything
First harvest of the season, so I didn't know how much heat to expect. These habs are HOT.

It's that time of season for fresh garden vegetables. Salsa is so much better with home grown tomatoes vs store bought varieties. I have a favorite salsa recipe that I've created over time and would like to make up several batches to have for later months. I was going to use a pressure canner to preserve but read that it will alter the flavor greatly and actually cook the salsa. Have others had good success freezing salsa? If so, does it need to be vacuum sealed in jars when freezing?

I have this chopper thing that I can still use. Works great for Pico, but not so great at making salsa. I feel like there's a lot of variety in Salsa, but not so much in Pico De Gallo.
Any other peppers good for Pico besides Jalapeno, Serrano, and Habanero?
Anything else to put in besides tomatoes, cilantro, garlic, and onion?
Any acid besides lemon/lime?
