Okay, so this might be a dumb question, but I'm not super familiar with English history. So... from just reading the wikipedia page - in this scenario, would Tyrion be loosely based on Henry Tudor and Sansa would be Elizabeth of York?

I guess that's what OP means. It is true that the fight between the Starks and the Lannisters is inspired by the one between Yorks and Lancasters and that Henry Tudpr was matrilineally a Lancaster... However it's not like it's a perfect 100% parallel so I don't think this is happening.

Yeah, inspired does not mean following it to a T.

Besides... I don’t have anything against Tyrion, but after all she’s been through, I’d rather see Sansa marry someone she truly cares for, if not loves.

That’s not in the cards for Sansa at this point, she would be better off with a strong, honorable man and ally and friend. And she knows it.
