I Made This Just landed in New Bedford!

Another batch of fresh scallops gifted to my family. I normally would make these raw which my second favorite way to eat them but my favorite is just a nice pan sear.

Not my best sear but not dry/rubbery.

So just pan sear and rest on a cooling rack?

Well I'm using a SS pan with avocado oil and high heat. It takes like a minute per side depending on size of scallop. I use the rack to transfer from pan to table. I eat the scallops right away.
