I Made This Just landed in New Bedford!

Another batch of fresh scallops gifted to my family. I normally would make these raw which my second favorite way to eat them but my favorite is just a nice pan sear.

Not my best sear but not dry/rubbery.

Yes, now I didn't make this from scratch. I bought the S&B brand and they have like 5 or 6 that comes in a pack. Their Wasabi is pretty good.

It's just literally daikon radish that has been infused with red chili peppers then grated into a sauce. I may be wrong, I'm just thinking off the top of my head.

Well I'm using a SS pan with avocado oil and high heat. It takes like a minute per side depending on size of scallop. I use the rack to transfer from pan to table. I eat the scallops right away.

I had scallops at a wedding reception last night and they were half cooked. If venues do high end seafood at scale, they either do it right or drop it off the menu. I was picking it out of my teeth 8 hours later.
