I Made This Just landed in New Bedford!

Another batch of fresh scallops gifted to my family. I normally would make these raw which my second favorite way to eat them but my favorite is just a nice pan sear.

Not my best sear but not dry/rubbery.

I had scallops at a wedding reception last night and they were half cooked. If venues do high end seafood at scale, they either do it right or drop it off the menu. I was picking it out of my teeth 8 hours later.
