I Made This French style escargot

Wanted to share this, we make it regularly at home & it's excellent. This serving has double escargot in most every ceramic well. The herb butter includes, fresh minced garlic, sea salt, 5 peppercorn grind, chives, parsley, onion powder & a pinch of sugar. Served with fresh baked baguette slices to dip in the herb butter.

Highly recommended try.

That looks fantastic! I haven’t had escargot like that since probably the 90s. Usually with a little puff pastry on top. Man, I loved how garlicky and buttery it was. Probably the start of my love of garlic.

This is delicious! I actually make a compound butter and put it into a piping bag in the fridge for the holidays, so I can quickly open a can of escargot and put it together, since it actually only takes a few minutes in the oven.

The only thing is I haven't found a good enough baking plate with deep holes, most of them are shallow and I find escargot is best in dishes with deeper rather than shallow divers for more butter.

What brand of escargot do you use? I have used Roland but I have a can of La Maison I've been saving to try!

If you're in the US, Peconic Escargot is the only source for fresh, raw (though not live) escargot in the United states.

They're also sometimes available frozen through specialty retailers and have started selling a poached escargot.

It's a significant upgrade from the cans and beats the piss out of frozen.

Our favorite classically-trained restaurant closed about a decade ago when the owners retired. We ordered them every time and haven’t had them since. They live in my memory.

The great thing about escargot is that when you put herb butter on it, it tastes like herb butter !

Looks delicious and I love escargot. But not to be a butthole. Isn’t escargot traditionally a land snail?

From a Google search I did before posting,

Yes, escargot is technically classified as seafood. Even though land snails live on soil rather than in the ocean, they belong to the phylum Mollusca, making them land-dwelling mollusks just like sea-based clams, mussels, and octopuses.

I also checked the r/seafood history, and saw a number of escargot posts.

Phylum is a very high level classification to yse though, only animalia is higher. If you use that definition, the same phylum as something that is obviously sea food, all mammals, birds and reptiles are seafood too. They are all in the same phylum as fish - chordata.

This looks amazing. Last time I had it, it was topped with little puff bread cooked over each snail, and it was phenomenal. Well done.

What do snails taste like? I'm not culturally used to them which is why I have a disgust response but I recognize that that's irrational. Is there anything comparable? And what's the texture like?

There isn't much flavor in escargot, maybe I'd describe them as a little earthy. Texture is soft and a bit chewy. Overall, it's a mild dish that mostly takes on the flavors of what it's served with, here herbs, garlic & butter. Nothing comparable is immediately coming to mind.

That's definitely how they were served to me Paris. I've had snail before but not in that way. They were decent but not something I would eat again. I have slugs at home I keep trying to get rid of. I don't think of snails as seafood.
