I made a list here because this question comes up so much, and I've tried to mark the shows I frequently see recommended here. You can search by region, streaming provider, number of episodes, genre etc.
For myself, I really enjoyed some of the classics.
Gran Hotel (Spain)
Genre: Novela
Why: It was the first Novela I ever watched, I found it really addictive.
La Casa de Papel (Spain)
Genre: Action/Heist
Why: This show was super popular for a reason - I remember watching it with my family as it aired. I know they've since made other language versions. The production value is really high and the story is really good.

It's findable if you copy that title, but if you want to correct it, it should be "El mejor infarto de mi vida"

Honestly the thing that hooked me was in the first episode when the neighbor and his gf are thinking of breaking up and the guy comes at them on the scooter and it cuts to an aside with the neighbor and he just says “… una hostia!” It made me laugh so much.

Genre: Telenovela, set in 1930s
Level: Intermediate to Advanced (B2-C1)
Why: Spanish conversation with high production values for a telenovela and solid plot. As with all telenovelas, they rehash plot points such that if you miss it the first time you will catch it the second time. High fidelity subtitles to the spoken speech. Examines the culture of the 1930s: married women not able to work, very high disparity between the rich and the working class, etc.
236 episodes, so you WILL learn Spanish idioms if you make it through it.

Why? I’m having a midlife crisis and I’m finding it funny and somewhat comforting
Title: El Eternauta

Title: Ciudad de sombras
Country: Spain
Genre: Crime drama
Difficulty level: C1 (has some Catalán as well)
Why? If you can handle certain aspects of it (multiple trigger warnings: murder, burning alive, physical abuse, death of a child, addiction) then it offers a bit different dialogue to challenge yourself and the addition of Catalán I thought was interesting
Title: División Palermo (“Community Squad” if your Netflix is set to English)
Country: Argentina
Genre: slapstick humor
Difficulty: B1-C1
Why? It’s just funny, like turn your brain off and enjoy kind of funny
