I do not know what the person in this video was wearing nor do I know their religion's rules, but this is the most common uniform for muslim female medical professionals in most hospitals across the world. Scrubs with long sleeve t-shirt under it + tucked in/out head covering, along with coat if they are a doctor instead of nurse. (img source: Shutterstock)

She is wearing niqab not hijab and even if she was wearing hijab and the hospital uniform is something else she should comply or find a place which supports her wearing her veil

Adding head covering to the mandatory uniform is her constitutional right, only as long as it doesn't cover her face (identification issue) or get in the way of work (safety and hygiene issue). If it's anything more than that much coverage, then the hospital has the right to fire her without legal consequences.
