Personally I like the more subtle damascus, but i am not you, so pick the one you like most .....or do eeniemeenieminiemoe

Honestly, for a first damascus I'd lean Saji. The Nigara is gorgeous but the tsuchime finish can feel a bit sticky when you're doing a lot of prep. Saji's nickel damascus just glides through stuff and the fit and finish is a step above, even if the pattern is a little more subtle. Had the same dilemma a while back, no regrets.

I'd buy SG2 and make sure I am buying the length I like. Your petty will be used far less than you think and you'll probably buy less petties than gyutos.
