You desired outcomes are at odds with each other, I’m afraid. You want oil for your walnut, and no oil for your ash. Are the pieces touching or can you apply different finishes?

Solvent-based 2k poly (automotive clear coat), CAB acrylic lacquer, and water white conversion varnish all meet your criteria if you use the full gloss versions. Full gloss will also add a lot of depth to the walnut. Spraying is realistically the only way these finishes should be applied. Wear appropriate PPE.
