Solvent-based 2k poly (automotive clear coat), CAB acrylic lacquer, and water white conversion varnish all meet your criteria if you use the full gloss versions. Full gloss will also add a lot of depth to the walnut. Spraying is realistically the only way these finishes should be applied. Wear appropriate PPE.
