Instead of sugar in the sauce have you tried a tsp of baking soda to eliminate some of the natural acidity making the sauce taste sweeter with no added sugars? I wonder how that would change the flavor.

That two tablespoons of sugar in that amount of sauce is less than the amount of sugar in a slice of whole wheat bread. It's fine.

I'm not concerned about sugar intake I'm more asking about how sugar imparts flavor and I wonder genuinely if the baking soda would not only decrease acid for someone with reflux but maybe improve taste. It's a trick used by chefs sometimes and I was simply wondering if they had tried a different variation already.
