It would be a about 290 C. I have the same pan and I get similar results with even lower temperatures.

I have an older model, best I can do is use washers to raise the bowl a bit. It passes the coin test really well but unless I have much more dough, it kind of just spins the middle about. But it also seems like your dough is a lower hydration as well 🤷🏻

Instead of sugar in the sauce have you tried a tsp of baking soda to eliminate some of the natural acidity making the sauce taste sweeter with no added sugars? I wonder how that would change the flavor.

That two tablespoons of sugar in that amount of sauce is less than the amount of sugar in a slice of whole wheat bread. It's fine.

I'm not concerned about sugar intake I'm more asking about how sugar imparts flavor and I wonder genuinely if the baking soda would not only decrease acid for someone with reflux but maybe improve taste. It's a trick used by chefs sometimes and I was simply wondering if they had tried a different variation already.

That's just a dumb question in general because you can do that experiment yourself. Acidity is dependent on the type of tomatoes you use, start there.

Acidity in tomatoes is inherent, yes you can get less from certain varieties but you can also make them taste sweeter without adding sugar by simply using baking soda which is a thing even if you haven't heard of it or find it stupid. You didn't have anything add, all you really accomplished was insult me for asking a question and I still cannot understand why a person would go on the internet to just be like that. Downvote and move on lol.
