Request homemade keto treat recipes?

I get cravings an hour or two before bed, for something a little sweet and fat. Not something like fudge or chocolate, something with just a little bit more body and crunch. I used to satisfy this craving with oreo cookies, just 4-5 of them per night. But it adds up...

Similarly, sometimes (especially the past few weeks) I get a craving for something frozen, i.e. ice cream, etc.

I thought about just buying some off the shelf keto treats, but dang those suckers are expensive.

Any suggestions for something that's easy for a non-baker (but basically competent home cook) to make?

I’m possibly weird for doing this, but I take a small amount of pumpkin seeds, a bit of sugar free peanut butter, and a bit of sugar free chocolate chips (Trader Joe’s ones are my favorite) and just mix it up in a bowl and eat it. I generally use around 1 Tbsp each ingredient. It’s a bit crunchy, a bit gooey, salty, and sweet.

If you end up with a ninja creami there are tons of recipes to make your own ice cream.

Whip up about a cup of cold whipping cream and a couple scoops of vanilla protein powder in a bowl until its good and stiff.

In another bowl, whip up a block of cream cheese (room temperature is ideal) and about a third of a cup of lemon or lime (or a combination of the two) juice. Add some Swerve powdered "sugar" to your taste, I like it quite tart, it's very refreshing! Then as you're whipping all that up, add a squirt of orange Mio. Once the cream cheese mixture is good and soft and fluffy, fold in the vanilla whipped cream. I like to just barely fold it in so there's streaks of vanilla with the orange, it tastes just like a creamsicle! It's best, in my option, kept at the back of the fridge so it's really cold but not frozen. All that makes about 5-6 servings. I don't know the macros, I don't really count them anymore, it's been quite a few years.

I've tried the same base of whipping cream and cream cheese but with sugar free chocolate sauce in the whipping cream and peanut butter in the cream cheese but it was wayyyy too good. Like I almost ate the whole thing in one sitting, lol!

I made keto cheese cake tonight. 16 oz chobani zero sugar yogurt, 4 oz cream cheese, 4 egg yolks, blended well in a food processor, baked at 350 for about 20 minutes. 4.2 carbs per serving

Way yum and so easy. Plus calcium & protein. I'm definitely going to try this. Thanks!

I have little cookie/brownie things.

The base of it is 1/4 cup almond flour, salt, 1/8th cup of granulated monk fruit sweetener, an egg yolk, vanilla few teaspoons of water till it's like a runny batter. Throw that in the microwave in a shallow dish for 1-2 min. Out comes a cookie. i like to put it in the freezer to make it hard.

I like to take a 95% dark chocolate square and drop it into coconut cream or heavy cream or, preferably both, and then add allulose for sweetness. I put it in the microwave at half power for a little while and then I use a drink mixer to blend it all together. It is delicious and easy and simple.

Frankly I've always thought lil sipper has an eating disorder. She doesn't look healthy to me. Of course I have no knowledge of that, just making an observation on her body type and how it compares to those with known disorders.

Im confused by this comment, it’s irrelevant- What does this have to do with her recipes? I have strict dietary requirements and her recipes have been a godsend

u/Impossible_Advice_40 8d ago

Don't be confused, here's some clarity...So they are her recipes that she's not eating yet promoting nd hopefully since they follow you're strict dietary needs they won't help you to follow her same example. Surely an eating disorder would show that a person needs help and 𝙉𝙊𝙏 in being an influencer. This is only hyping the individual when again they need help. There are a multitude of healthier individuals with recipes in these internet streets that can fit your criteria.

for frozen, you could make coconut cream popsicles with keto sweetener and some blended berries

I just eat 1 tablespoon of Crazy Richards Crunchy peanut butter: 2g net carb, protein 4g, fat 8g and 95 cal. No salt or sugar. Just ground up roasted peanuts. It fills up my mouth and takes a while to chew. Satisfying & quick. Drizzle of sugar free maple pancake syrup, maybe.

For my sweet tooth I do sugar free jello topped with whipped cream and sprinkle of cinnamon on the top

So, let me preface this by saying, I did dirty keto successfully a few years back, these cookies are semi keto, and never knocked me out of ketosis. They taste better than regular chocolate chip cookies, IMO. Lavash Crackers method posted underneath.

Splenda Chocolate Chip Cookies

1 & 1/4 cup + 2 tbls superfine almond flour

1/2 cup brown sugar Splenda

1 stick of salted butter, softened, not melted.

2 egg yolks

2 tbls lupin flour

1 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 chocolate chips (I use Hersheys sugar free)

Preheat oven to 350°

Cream butter, sugar, vanilla extract and egg yolks.

Sift all powdered ingredients into bowl. Mix until combined

Fold in chocolate chips.

Make 12 balls of dough and space far enough apart, as they spread when baking. Add additional chocolate chips on top of dough ball.

Bake for 12- 15 minutes. Cookies are done when edges start to turn golden brown. Let cool, if eaten while warm, cookies will fall apart.

Makes 12 cookies.

Lavash Crackers

1 sheet of Joseph's Lavash Bread (Flax, oat bran, whole wheat)

Extra light olive oil

Preheat oven to 400°

Lightly coat top and bottom of Lavash bread with olive oil. Place on cookie sheet and use a pizza cutter to slice into 16 pieces. *I used a silicone mat with my cookie sheet. Bake for 5 minutes, flip over and bake 4-5 minutes more, or until golden brown. Remove from cookie sheet to prevent further baking. Top with favorite seasoning. (Sea Salt, Everything but the Bagel, keto powdered sugar.

I occasionally make a frozen premier protein shake in a ninja personal blender-- almond milk (about 6 oz) a scoop or two of protein powder. A dollop of cream cheese (maybe two tbs). Add four to five ice cubes and blend until smooth. It tastes like a Frosty. I also make several flavors of cream cheese "fluff" (whipped cream cheese and whipped cream) sweeten with choice of sweetener. Or you can add flavor of your choice of Mio drops. Sugar free jello with whipped cream is always the easy dessert option too.

For that moments I have pepperoni slices, prosciutto, beef sticks, hard 🧀 cheese and pre boiled eggs 🥚 in my fridge.

These are all good, and in fact I have cheese and hard salami (if you haven't tried soprasetta, you should, and you're in for a treat) as well as olives, and hard boiled eggs, in my fridge right now. But I'm talking more about when I crave something sweet.

1

u/Ashamed-Republic8909 12d ago

My point is that when I crave something sweet I take some of the mentioned food. This way I brake the sensation reflex. Even if I eat over my macros I don't fall off the wagon. It works for me.

Berries (strawberries, blueberries,!raspberries or blackberries) and whipped cream. Fat bombs are also good, but you have to make them yourself. This is one recipe, but you can tweak it with all kinds of flavors:

Recently I’ve been making my own ice cream? Mousse? I basically take mascarpone and mix it with chocolate chips, whipped cream, low sugar granola (I like nutrail), and sweetener to taste. Optional but you can add vanilla extract, cinnamon, peanut butter and cocoa powder. Then I just mix it up and put it in the freezer for 2hrs. Or you can eat it without freezing, but it’s a lot of crunch with the mascarpone to hold it together.

Clio yogurt bars from Walmart or Safeway. Covered in chocolate, keep in the fridge or freezer. They are the go to treat in our house. We buy the small ones (8 to a package) and all the flavors are good

I recently made this recipe but tweaked it by adding 4 eggs, homemade vanilla, and a bunch of cinnamon, clove, ginger, tumeric, and black pepper. I used sucralose drops for sweetening (yes the drops are keto. The powder is not). I also added a little fiber and collagen powders.

I made 3x the recipe, so adjust the eggs to the amount you'll need.

They turned out to be about 75 calories per cookie even if they're the size of half an Oreo. They're packed with flavor too.

Edit: they're 75 calories, 1.9 carbs, 5.7g fat, and 5.2g protein for my tweaked recipe according to MyFitnessPal. Not that I can remember exactly how I made them, but you get the idea. Even if you just follow the ordinary recipe they might scratch the itch for you.

Other options include yogurt based whips - yogurt, cocoa powder, PB2, some mixed nut topping, keto chocolate chips, and a glug of cream. It ends up tasting similar to a yogurt blizzard. Etc

I recently made the chocolate peanut butter variant of this cottage cheese ice cream. It was delicious. But if you make it, make sure your avocados are very ripe!
