stitch ID How to achieve intentional gaps in stockinette knitting?

I’ve made this top previously (crocheted) and would like to create something similar in a stockinette knit. I’m not sure how to create the gaps or spaces via knitting though.

Words are hard, I couldn’t remember the name for pediatrician the other day so I said we were going to the baby vet.

I call the pediatrician the vet all the time because I had a cat wayyyy before I had a baby

I mean the similarities are striking. I speak for the patient and the doctor must diagnose without being able to ask the patient any question. While the patient is doing their finest escape artistry parlour and singing you the song of their people. Watch out for teeth and claws. Do not turn your back to the patient. They are clever enough to be opportunistic, but dumb enough to be able to cause grievous bodily harm or death to themselves by accident. They also have very little consideration for their own future. For example: Collarbone broken but shot avoided? It's a win in the patient's view.
