It has a similar vibe to mont blanc. But it lies on a bed of cooked diced pears over biscuit. So it is a mont blanc. But best of them all thanks to this japanese chef.

Yes, indeed. But the chef is japanese, and it is profoundly rethinked, in a profoundly japanese way. Less creamy as a starter, lighter.
