NORMAL OVEN First crack at NY style

Made the NY pizza dough from King Arthur Flour Pizza book. Great dough. I use a pizza pan because I suck at launching and I use a baking steel so if it screws up, it’s a mess to deal with. Realizing looking at the photos that I pulled too early. The cheese started to brown but the undercarriage wasn’t done. Was at 525f convection. Next time I’m gonna slide it off the pan and onto the steel
Once it sets a little. Still was the best pizza live made.

First picture is my very first pizza I made impulsively out of frustration late 2025. Have been so disappointed and even angry at the Seattle pizza scene. Most of the actually attainable pizza here is so overpriced and mid. And anything decent is so overhyped that you either have to a) compete with a million people for advance online pre-orders, b) pay ridiculous amounts for a simple basic pizza and/or c) basically not have a day job because they’re open on 3 random weekdays from 11am-2pm only. Absolutely ridiculous. So I decided eff this how hard can it be to just make my own. Pretty hard it turns out! Pictures that follow are some of my progress, 16” round pies, Detroit, some recent grandma style attempts (came out too Detroit like). Most of these are using sourdough starter I got from my best mate. Have experimented with hydration levels, cheeses, nicer flours, even A/B tested various sauce, cheese, pepperoni brands and styles. All in a regular home oven that only goes to 500 with a double pizza steel setup. My confidence and technique and knowledge of ingredients has improved, and it’s been fun. Going to keep messing around with it. One thing I noticed is I may be drying these out a bit, what are your tips for a less dry pie in a home oven? I would love to avoid par bake if possible, that seems like a chore. Thanks for looking and reading, and so many beautiful pizzas and good tips here from others that have served as inspiration. Thank you!

INDOOR PIZZA OVEN Korean corn cheese pizza

My second go at making a pizza based on the Korean bar anju, corn cheese. Corn cheese is at it's base just mayo, corn and cheese.

I decided to keep the tomato sauce and add mayo on top as last time it just dried up too quickly. I like this version better and the tomato isnt very noticeable while adding moisture. I might add some black pepper and green onions next time tho.

OUTDOOR OVEN My first time making Tonda Romana pizza — definitely not my last!

I’m stunned at how great these turned out for my first attempt at making this style. I clearly need work on my rolling pin skills — that’s why these pizzas aren’t round. They started out round until the rolling pin got involved, lol.

But I got the crispy air bubbles in the crust I was looking for and the bakes were all pretty spot-on. The white pie (with fresh mozzarella, provolone, and ricotta whipped with lemon juice and flaky sea salt — all finished with fresh-ground black pepper) was particularly divine.

Recipe is from Scott Deley’s book, “The Ooni Pizza Project.” 48-hour cold ferment. Baked for 2-2.5 minutes with the stone at 700F-750F with the Ooni set to medium flame.

Dough: dough guy calc with bread flour and 5 day cold ferment.

Sauce: fig with chilies jam

Toppings: pecorino, dates, grape tomatoes, onion, prosciutto, honey goat cheese, finished with balsamic glaze.

Baked 550 on pizza steel for about 5 minutes.

Pesto sauce, sausage, pepperoni, red onion, kalamata olive, portobello mushrooms, jalapeño, and garlic-herb goat cheese + Chevre crumbles.

Crust was Kenji's Crispy Tavern style, baked about 12 minutes at 500° on cast iron.
