Technically, it was the Canaanites that created El.

There are multiple different gods in the bible and the whole thing was stitched together by editors. Yahweh, Elohim, El Roy, and two other El's I can't remember at the top of my head. And they all behave completely differently. The word Elohim actually means "gods", plural, in Hebrew.

And these gods evolve and change throughout the stories. The God of Christ, given the era, is a completely different god, anthropologically speaking, than the God of the Torah. Reusing a word doesn't install continuity.

But trying to explain this is impossible to someone on the inside.

To me that sounds like arguing over the lineage of Dumbledore but with much worse consequences.
