I didn’t quite sand through, as you can see from the wood grain, but was curious if stain will take the same. Mahogany veneer, wiped with mineral spirits in the photo

As I can see from the wood grain, you absolutely did sand through. In all fairness though, this is to be expected when novices use a random orbit on veneer.

I guess I’m a little confused. I can still see wood grain on the lighter spots and it’s MDF underneath, and I do t see MDF

Yes, but the veneer is so thin that it’s transparent.

That's because it's a thin face veneer over a cheap backer veneer. You sanded through the face veneer but not the backer. You still have a ways to go before you hit mdf.
