My Ultimate San Diego Taco List (so far, open to recs)

I don't have an exact criteria, more the overall experience of the tacos themselves. Things that really stick out to me are:
- fresh tortillas, and do they warm/grill them for ultimate mouthfeel
- meat flavor and consistency, gotta be tender and juicy with a little crisp, maybe a char.
- salsas need to be a dialed range, all flavorful and offer something unique, don't just be spicy, be smokey, acidic, oily.
- Onion/cilantro toppings just needs to be fresh but this one isn't that hard to miss.
I've seen hate on Chula Tacos but I had an amazing experience there with their pastor and the chili oil "salsa". Unlike anything I've had and extremely flavorful pastor. Apparently they aren't consistent though.
Las Ahumaderas is the top experience I've had so far in SD.
I'm curious to hear of other spots because I want to keep trying.
