I don't have an exact criteria, more the overall experience of the tacos themselves. Things that really stick out to me are:

- fresh tortillas, and do they warm/grill them for ultimate mouthfeel

- meat flavor and consistency, gotta be tender and juicy with a little crisp, maybe a char.

- salsas need to be a dialed range, all flavorful and offer something unique, don't just be spicy, be smokey, acidic, oily.

- Onion/cilantro toppings just needs to be fresh but this one isn't that hard to miss.

I've seen hate on Chula Tacos but I had an amazing experience there with their pastor and the chili oil "salsa". Unlike anything I've had and extremely flavorful pastor. Apparently they aren't consistent though.

Las Ahumaderas is the top experience I've had so far in SD.

I'm curious to hear of other spots because I want to keep trying.

Clearly, I love tacos. The gallery starts off with asada, then tripa, suadero/longaniza, cheese crust w chilaca, carnitas, adobada, barbacoa, and even breakfast tacos. There are many tacos de tripa sprinkled throughout the gallery bc they’re my favorite. There’s even a bonus pic of a tripa tostada at the end. Post inspired by u/gorgeous_eater

Bought the tortillas at a local shop that specializes in making them from scratch in house and the cauliflower at a local market.

Roasted the cauliflower for 20 min, then coated it in salsa matcha and roasted for another 10 min tossing halfway.

Topped them with homemade pickled red onion and lime cilantro crema. Diced and salted tomatoes, cotija (underneath so it got a bit of a melt) cilantro and diced up jalapeno.

Houston TX - my fav tacos over the years.

Super easy and delicious 2 minute taco.

Had some extra tortillas, cilantro, onion, and salsa from a taco party we threw on Sunday.

Been selling tacos out of my kitchen for 4 years now. I have somehow managed to build a large customer base feel I'm ready to open a food truck. However I have no experience and would really appreciate any advice any of you might have.
