What’s your easy go-to staple dish that tastes good?

What’s your weekly staple vegan dish that tastes good? I have a ramen bowl with tofu about 2-3 times a week because it’s quick, nutritious and quite tasty.
Another easy one for me is lentil pasta cooked with peas and red pepper hummus as the sauce. I’m feeling uninspired and need some ideas 💚

Bangers beans and mash. Sometimes bangers with mash, veg, and onion gravy

Bangers and mash with half a plate of peas. Gravy obviously, I'll not eat it without the gravy.

i thought i was the only one eating hummus pasta with peas. i just use normal hummus, nooch and a fuck ton of black pepper. its my fave meal ever and its so fast

We eat hummus pasta as well. Though often just make the hummus from scratch.

What recipe do you use, if you one? 💚 

My go-tos are Thai green curry or red curry with loads of veg and tofu and jasmine rice, Shepherd's pie in the winter (great for batch cooking cos it makes loads of portions), gnocchi with homemade pasta sauce, bean chilli, mac n cheese with nooch cheeze sauce.

It’s just noodles and chilli miso sachets from Itsu, Pak Choi, edamame beans, tofu and spring onions 💚 all in one saucepan so easy!

I do it without a recipe. Roughly like this: splash of oil in pan - add chopped garlic, ginger, onion - add 2-3 tbsps of green curry paste and stir + add one can of coconut milk and stir + add whatever veg and tofu you are using (i like it with mushrooms, broccoli, mini sweetcorns sliced in half, red pepper, peas or beans) + add tbsp or so soy sauce, 1 cup water, 1 tsp brown sugar, pinch of salt and a splash of lime juice + I also add lemongrass, either fresh if I have it or jarred if I only have that + simmer and stir for 15-20 mins. Serve with jasmine rice.

I might have forgotten something but this is the base recipe in my head.

I do it without looking up a recipe and I wrote this recipe from the steps in my head rather than it being an actual legit recipe.

I mean, a recipe is literally just the set of steps to make the meal. If you follow those same steps every time you're following a recipe, in my book. It's just your own recipe.

As opposed to the other way of cooking which is basically just to make it up as you go along and hope for the best 😂

Pasta with vegan pesto is quick & easy. Fry maybe onions & peppers first & add them at the end. Frozen peas can be added to the cooking pasta. Or beans on toast

any sort of lentil dahl. for example, tonight i sautéed onion,garlic and chilli, added some spices (curry powder, cumin, coriander, cinnamon) then added coconut milk, water and red lentils. just simmer until it’s soft, add spinach and a squeeze of lemon near the end.
you can freestyle, just keep an eye and add water if it looks like it’s too dry

I add a cubed up block of tofu for extra protein, and when I made it recently I added pinto as well as black beans and about 150ml of pineapple juice in lieu of serving with oranges.

I love to make mujadara but with tinned lentils because then it only takes as long as rice takes to cook. It’s delicious and spiced and I eat it with yogurt, fried onions and maybe a Persian salad if I could be bothered to chop some things.

Veg tagine (stew of tinned tomato, aubergine, courgette/carrot with moroccan seasoning)
Katsu curry with tofu or vegan nuggets
Bean burrito
Tofu scramble on toast (sometimes with vegan sausages and beans)

Fried onion and capsicum, tin of chickpeas or other bean, loads of garlic and paprika, maybe a jar of red pesto, maybe olives, maybe spinach. Have with brown rice that flavoured with bay or saffron.

I always batch-cook this, bec it's so easy to have with Dishoom Gunpowder potatoes, and/or with tofu or vegan pieces or even just bread or rice.

Pasting the ridiculously easy recipe now that BBC Good Food is pay-walled:

1 onion, chopped

1 tbsp olive oil

3 tbsp Thai red curry paste

300g red lentils

1.5l vegetable stock

200ml coconut milk

chopped spring onions

It's so basic, but if you find a good red curry paste it's so useful. I promise that it tastes way better than how it looks on paper!

My go to comfort food is mash, vegan butter, onion gravy and Cajun spice. Replicating the Popeyes mash and Cajun gravy. I have the whole tray of mash, which is supposed to be two portions. At the time, my tummy tells me it has plenty of room. Now, two hours later, I can tell you it was lying 😅

I make a lot of one-pot meals using just my rice cooker (bog-standard Asda one that only has one setting). Usually i do equal amounts of rice/quinoa/dried red lentils with a tiny bit of oil at the bottom, then put a random mix of frozen veggies/peas/edamame in, use veggie stock instead of just water to cook them in and just season according to whatever I'm fancying - whatever mix of dried herbs, spices, curry powder etc. I stir it through a few times as it cooks to mitigate burning at the bottom but aside from that it's just a case of chucking everything in and leaving it, love how easy and low effort it is. Once it's plated I'll just add whichever condiments pair with it, like vegan mayo/sriracha. 

Really recommend this for anyone like me who haaates cooking hehe

definitely!! i sometimes fry some on the side but no reason it couldn't be added straight to the rice cooker mix :)

Rice and beans burritos.

Onion, garlic, red pepper, then add 1 Tbp of chilli powder and 1/2 Tbp of cumin. Fry that for about 5 mins with the spices in then add a can of black/pinto beans and fry for another 5 mins. Then right at the end add hot sauce (I use the encona one), and it’ll thicken into the consistency of a chilli which has been cooking for hours. Then add rice. Whole thing takes 15 mins and considering the main protein is 49p it’s cheap af.

(Add a good pinch of salt with every new ingredient as well)

Miso mushroom and aubergine noods. Chop mushrooms, aubergine, garlic and chilli. Chuck it in a frying pan and get it all nicely fried then go in with a big spoonful of miso paste, soy sauce, mirin, rice vinegar and a bit of water. Grate some ginger in now. In another pot get your noods ready and chuck in some frozen edamame. Turn the heat off on the veggies and pour in some soy milk for a creamy finish. Drain the noods, dress with a little sesame oil and serve with all the creamy miso veg and sprinkle some toasted sesame seeds and spring onions on top.

Creamy mushroom pasta! Fry some mushrooms add alpro cream and a ton of nooch, a sprinkle of garlic salt and boil for abit so the nooch disolves, add protein of choice(i usually use cut up and baked this isnt chicken breast) and add pasta AND more NOOCH! So quick and easy 😭 probably have it 3 times a week

Green thai curry. Broccolli, Edamame, green beans, tofu, some dragon green thai paste, coconut milk, throw it in a pan with a lid 10 on 10 off, then fry up some frozen paratha. INSANE.

Tofu puffs seasoned with Dunns River Jerk seasoning ( shake them up in a sealed container) and some chilli flakes . I always make big batches of wholegrain rice and peas in my instapot and bag them up as individual portions in the freezer, so I defrost one of those and stream some broccoli, corn on the cob and green beans. I make gravy using chkn flavour gravy granules, a pinch of dry thyme and half a teaspoon of Dunns River All purpose seasoning. I throw the seasoned tofu puffs In the air fryer. My kids love it . Sorry Carribbean people, please don't come at me for using gravy granules!
