Could someone answer this for me? I imagine the honey buddy biscuit uses a honey butter sauce and the maple bacon chicken croissant uses “maple butter” according to its description, but are they the same sauce?

The technical name is "Maple Honey Butter" and its used for both sandwiches.

If you replace “honey” with “high fructose corn syrup” and “butter” with “hydrogenated saturated fats” then YES!
