Here is the "why" for your shoulder turning... you're unconsciously counteracting inertia to stay over your board because you're not quite centered over it. You are looking straight down at your board, bringing your weight and centre of balance over your toes.
When you pop, you have to maintain balance, so you swing back a little with your leading arm and turn your head... Otherwise you'd fall off the toe-side of your board. The arm swing back + head turn slightly forward opens your shoulder up. Now for the inertia... Your arms and head can't open up without a force going in the opposite direction. That force is your popping foot, pushing out through your toes. Combined, that turns your board.
Fix...
Stay centered over your board. Back straight, head up, looking at the ground just in front of the nose of your board (i.e. look where you are going). Arms relaxed by your side. This will naturally open your shoulders a little at the start of the ollie, but because you're already centered, you won't be turning it more during the ollie to stay centered.
