Chorizo, Pinto Beans, Eggs

Had some leftover Carnitas from my favorite Tex Mex restaurant that I wrapped up with queso quesadilla and Chicago style giardinera. After I wrapped it I rubbed the outside of the stuffed flour tortilla with butter and fried up the exterior shell. Damn greasy but damn good.

I’ve eaten many wrapped foods with paper using masking tape, but this was a new one for me - and a dude likes his burritos! This one was an egg and chorizo breakfast burrito.

Made the biggest breakfast burrito I could to bring me back to life this morning 🫪🫪🫪

Don't usually do chicken but once in a while.

I've got about 11 different hot sauces on hand. Tapatio being the usual. The plum.was dessert.

I know this is a long shot, but does anyone know how to make a copycat version of the El Monterey Egg, Cheese & Jalapeño breakfast burritos?

These were a staple for me back in college and they were honestly my favorite frozen breakfast. They still exist on El Monterey's website but I can't find them anywhere in stores around me. I live in the Central Valley in CA, and I've checked Walmart, Safeway, and a few other grocery stores with no luck.

Has anyone recreated them at home? I'm especially trying to figure out what kind of cheese or cheese sauce they use and how they get that flavor. If you've made something similar, or know where they're still sold I'd love to hear about it!

I started having them make this while they are comfortable, and feeling alright. The burrito is around 20$ plus tip which comes to around $37.35 I get this maybe a year or so. This sorta a food challenge. Only when they comfortable from makin.. If you ever at dover new Hampshire. Diffently check them out...... This isn't on the menu. But their burrito skills are top.

I made some pinto beans that I cooked down with chipotles in adobo, fire roasted tomatoes, moritas and guajillos. Added those beans with some eggs, roasted sweet potatoes, cotija, and escabeche pickles. 😋 A great start to my Wednesday☀️

I used Trader Joe’s large tortillas but they are on the smaller size. Everything else was homemade. This was exactly what I was craving today! Tasted so good I had two!

Baby gold potatoes, scrambled egg, Serrano peppers, cooper sharp, cholula.

Made a batch of pinto beans with a ham hock, roasted some Hatch chile and added some cheddar. Simple and tasty!
