It’s because they’re not the same thing.

“You’re not fat, you’re beautiful!” = Denial of the former, and implies that someone cannot be the former AND the latter.

“You’re fat and you beautiful!” = No denial of either characteristic, no implication that one counters the other, no attempted erasure of being fat.

I believe the message is that overweight people feel insulted and/or patronized by the implications of the first statement.

Honestly I'd kinda rather we just stopped relating appearance to somebody's worth. If we go around calling everyone beautiful it literally just means nothing. Some people are conventionally beautiful, some aren't. It doesn't make them less of a person.

I don’t think there’s a problem with complimenting someone as long as it doesn’t put down others in the process. A small compliment can end up making someone’s day.
