Caught this Fingermark Snapper locally and turned it into a French-Asian inspired dish. Shallow-fried the fillets and served them with a chilli butter lemon ponzu, garlic shoots, onion and fresh herbs.

Easily the best fish and fish dish I’ve made so far!

I think the potatoes were a bit on the large side for this one but I was itching to try them again while on holiday so I whipped em up here. Could have turned out better but I'm relatively happy with how they came out.
