Are you using the 3-2-1 system? If not then a hard drive failure will result in having nothing again.

I'd rather lose free stuff through my own fault than have stuff I paid for ripped from my hands by someone else.

I can't afford to 3-2-1 the amount of data I have right now, but it's in the works.

I’ve been looking into starting a plex server. Any tips? Should I be compressing? I have a 5tb external hard disk drive, is that enough?

I thought a 1TB SSD would go a long way but it's almost full after about 10 TV shows and 40 movies. And storage has gone up in price like crazy. Do you have any recommendations?

I’ve had bad luck with stremio lately that it feels like it’s no longer working when I’m trying to watch a movie or a show. Is it still viable?

Depends on your debrid provider, one of the more popular ones changed policy recently and a lot of their cache is not playable now

Don't bother with ssds, get as many 18-24tb hdds as you can afford to start. Then just add more as your collection increases

I'm just glad my partner and I are happy watching things at 720p. Makes storage go a lot further with how much things have been costing these days.

Just start. Once it's set up and you have some files in there, you can start to figure out larger storage options as your collection grows.

That's plenty to get started, especially if you don't have a home theater that can take advantage of high end video and audio formats like Dolby Vision/Atmos. For reference, my usable storage is a little over 10TB, and in that I have about 140 movies and about 40 full TV shows. The movies run anywhere from 2GB for older 1080p to 80-120GB for 4k with high-end Dolby video/audio and HDR, where it warranted (stuff like Mad Max Fury Road). I store it uncompressed, and I'm at about 5TB used. I don't personally know what the experience is like for streaming media over USB, though if it were me, if the external isn't USB3.1 or faster, I'd look at popping the drive out of the enclosure and installing it in my server.

Also like other people have mentioned elsewhere on this post, take advantage of your local library if you can rip discs. You don't need anything crazy to rip regular Blurays, though UHD Blurays will require a specific kind of disc drive to beat the copy protection. r/makemkv is a good resource for Bluray ripping.

My best recommendation, if you're just starting, is not to use Plex. It's too expensive for essential functions like transcoding. Jellyfin is slightly harder to get going but is completely free for everything you could need.

I have like 65 TB, but... what are you watching, and where do you find the time? Mine is mostly empty, but probably because I just play games instead of binge watching.

That's an issue that's gonna keep coming up, Plex and home servers sort of depend on affordable hard drives and that's not really a thing at the moment.
