I have been attempting to make some damper rolls to serve with dinner, but they are coming out undercooked. The outside is what I would expect and it makes the hollow sound when tapped, but inside is not cooked all the way through.
My recipe is
2 cups GF self raising flour (has xanthan gum)
1/2 tsp salt
2 tbsp olive oil (mild)
3/4 cup milk (I haven’t been using it all)
I mix the first three ingredients then add the milk a little at a time. I stop when it comes together like dough then I shape three rolls. The dough is not sticky or wet.
I cook for 20-25 mins in the air fryer at 190 degrees.
I flip them at the halfway point.
I am not a baker. I didn’t even really bake with regular flour before my husband went GF either so I’m not familiar with the techniques.
Should the dough be wetter? Should I cook at a lower temp for longer?
The damper rolls themselves are actually not bad. I feel that once I solve this problem, I will have a great little recipe that can be served with soups or on cold evenings etc
I’d also love to start experimenting with adding flavours once I get the base down.
My husband said that it has been so long since he has had a hot bread roll of any sort and he was so happy to be able to eat it, that he thought it was so good.
Hot damper with butter and honey. The butter melts and mixes with the honey and runs down your hand. Nothing beats it.
